Pepsico engaged Foodline Projects to install new technology to produce Red Rock Deli Potato Chips. The potatoes are fried using new technology which allows continuous kettle frying. The idea behind continuously kettle frying is to replicate the typical time-temperature profile of the classical kettle frying process, but in a continuous fryer.
